Ingredients:
500g cassava
1 tbsp turmeric
3 garlic cloves, minced
1 hot chilli, chopped
1 tsp freshly-ground black pepper
lemon juice
oil for deep frying
Method:
Peel and wash the cassava then cut into finger-sized pieces
Add to a pan with lightly-salted water then bring to a simmer and cook until just tender (about 15 minutes). Drain the cassava pieces and set aside to cool.
Remove any fibres from the cassava then season with turmeric, garlic, chilli and black pepper. Cover and set aside for 10 minutes to marinate.
Heat oil in a deep fryer to 180°C and fry the cassava pieces for about 8 minutes, or until heated through and golden brown on the outside.
Drain on kitchen paper and serve hot sprinkled with lemon juice.
These are served both as a snack and as an accompaniment.
