Malasadas is a traditional Portuguese recipe (from the island of Madeira) for a classic fried yeasted pastry is typically served on Shrove Tuesday. The full recipe is presented here and I hope you enjoy this classic Portuguese version of: Malasadas.

Ingredients:
120ml milk
1 cake of yeast (or 1 packet active, dried, yeast)
50g sugar
2 tbsp lukewarm water
1/2 tsp salt
50g butter, melted and cooled
3 eggs, beaten
105g plain flour
oil for deep frying
powdered sugar for dusting
Method:
Add the milk to a saucepan and heat gently until lukewarm. Take off the heat and pour into a bowl. Mix the yeast with the water to dissolve then combine with the sugar, salt and melted butter in the warm milk.
Stir in half of the flour, beating well with a wooden spoon until smooth. Add the beaten eggs then work in the remaining flour to form a soft dough. Cover the bowl with a damp cloth and set aside in a warm place until doubled in volume (about 60 minutes).
Heat oil in your deep fryer (or deep saucepan) until it reaches 180°C. Take the yeasted dough and drop into the hot oil by the tablespoon. Fry until evenly browned all over, turning occasionally.
Remove with a slotted spoon and drain on kitchen paper as you cook the next batch. Roll the malasadas in powdered sugar before serving.
