Method:
Place a pan over medium-high heat. When hot add in the olive oil and ghee. Add in the onion and fry for about 6 minutes or until golden. At this point stir in the garlic and cook for 2 minutes more.
Now add in all the remaining ingredients. Stir to combine and reduce the heat. Bring everything to a slow simmer and cook for about 20 minutes, or until the sauce has thickened to your liking.
At this point, use a stick blender to purée the ingredients until smooth.
You can use this instead of a base sauce in BIR-style curries. Alternatively serve on a bed of fluffy basmati rice and garnish with coriander (cilantro) leaves.
