Makvlis Supi (Blackberry Soup) is a traditional Russian recipe for a classic chilled fruit soup made from blackberries with garlic,, herbs, onion and cucumber that's served garnished with sour cream. Ingredients:
450g fresh blackberries
1 garlic clove, minced
40g fresh coriander (cilantro), finely chopped
1 tbsp fresh mint, finely chopped
2 tbsp fresh thyme, finely chopped (lemon thyme is best)
1 small onion, finely chopped
1 small cucumber, peeled, halved, de-seeded, diced and chilled
sea salt, to taste
1 tsp wine vinegar
sour cream, to garnish
Method:
Crush the blackberries in a bowl with the back of a wooden spoon. Strain of the juice then combine with the water in a measuring jug so that you have 850ml of liquid in all. Add the garlic, coriander, mint, thyme, onion, cucumber and vinegar then season with salt to taste. Mix to combine then place in the refrigerator to chill for at least 3 hours.
Serve ladled in bowls and garnished with a dollop of sour cream.
