Makoenya is a traditional Lesothan recipe (based on a South African original) for a classic yeasted bun that is fried to cook and which can be served for breakfast, or as an accompaniment with both sweet and savoury dishes. The amount you get will range from 30-40 depending on the size at which they’re made.

Makoenya is the Lesothan version of South African vetkoek (fat cakes) and are prepared in the same manner (though typically the quick or ‘instant’ version of the recipe is used).

Ingredients:

3kg white bread flour
2 tbsp salt
2 tbsp instant, dried, yeast
2l lukewarm water (about)
2 tbsp oil
2 tbsp white wine vinegar
2 tbsp sugar
oil for deep frying

Method:

Combine the flour, salt and yeast in a large mixing bowl. In a separate bowl whisk together the water, oil, vinegar and sugar until the sugar has dissolved.

Form a well in the centre of the flour mix and add 3/4 of the water mixture mix thoroughly then add enough of the remaining water mix to bring the ingredients together as a dough. Mix and knead thoroughly for at least 10 minutes, or until the dough is smooth and elastic but remains fairly slack.

Cover the dough with a sheet of greased plastic and set aside in a warm place to rise until doubled in volume. After this time knock the dough back then shape into small flattened rounds (these Makoenya will puff up when fried).

Heat oil in a deep fryer or deep pan or wok to about 180°C then add a vetkoek and fry until brown on the outside and cooked through. These versatile breads are typically served for breakfast, but are also served as an accompaniment to a sweet or savoury dish and work well as part of a main meal or even as a snack.
