Ingredients:
600g plain flour
200g maize flour
1 packet of active, dried, yeast (about 7g)
pinch of sugar
pinch of salt
50g butter
1 egg
200ml milk
Method:
Combine the plain flour and maize flour in a bowl with the yeast, salt and sugar. Mix well to combine then add the butter and rub into the flour mix with your hands.
In a small bowl, whisk the milk with the egg then knead this mixture into the dough. Knead the dough well and if it's little dry add a little more milk until you have a firm dough.
Cover loosely and set aside in a warm place to rise for 2 hours, or until doubled in volume.
Gently shape the dough into a loaf then set on a greased baking tray and transfer to an oven pre-heated to 150°C. Bake for about 45 minutes, or until the bread sounds hollow when tapped on the base.
Transfer to a wire rack and allow to cool before slicing and serving.
