Mahluta Çorbası (Red Lentil Soup) is a traditional Turkish recipe for a classic lentil and onion soup. The full recipe is presented here and I hope you enjoy this classic Turkish version of: Mahluta Çorbası.

Ingredients:
150g red lentils, washed and drained
1 onion, finely chopped
2 garlic cloves, finely chopped
3 tbsp extra-virgin olive oil
240ml warm water
500ml chicken stock
3 tbsp tomato purée
1 tsp cumin seeds
1/2 tsp crushed chillies
2 tsp dried oregano, crumbled
salt and black pepper, to taste
Method:
Melt the butter in a pan and use to fry the onion for about 2 minutes then add the garlic and fry until it softens (about 4 minutes). At this point add the lentils and the water. Bring to a simmer, add the lid half way and cook for 5 minutes then add the chicken stock, tomato purée, cumin, chillies, salt and black pepper.
Allow the mixture to cook gently for 10 minutes more, again with the lid only half on. Sprinkle the oregano over the top and serve ladled into warmed soup bowls and garnished with lemon wedges.
