Mafa (Breadfruit Pudding) is a traditional Marshallese recipe for a classic dessert of boiled and mashed breadfruit blended with eggs, sugar, butter, coconut milk, raisins and spices that's baked to cook. Ingredients:
1 medium-sized ripe breadfruit
250ml coconut milk
100g sugar
4 tbsp butter, melted and cooled
2 eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon freshly-grated nutmeg
1/2 teaspoon ground cinnamon
50g raisins (optional)
Zest of one lemon or lime (optional)
Method:
Pre-heat your oven to 175°C.
Peel the breadfruit, remove the core, and cut it into small chunks. Add the breadfruit pieces to a pan of boiling, lightly-salted water and cook until soft (typically 15–20 minutes).
Drain the breadfruit, transfer to a bowl and mash whilst still warm (it should have a consistency similar to mashed potatoes).
In a large mixing bowl, combine the mashed breadfruit, coconut milk, sugar, melted butter, beaten eggs, vanilla extract, nutmeg, cinnamon, raisins, and lemon or lime zest (if using). Mix well until all ingredients are thoroughly combined.
Grease a baking dish with butter or oil then pour in the breadfruit mixture, spreading it so it evenly covers your dish.
Transfer to the centre of your pre-heated oven and bake for 50–60 minutes, or until the top is golden brown and the pudding is set.
Allow the pudding to cool for a few minutes before serving. It can be enjoyed warm or cold.
