Ingredients:

1 small red onion, finely chopped
480g small pasta shells
salt and freshly-ground black pepper, to taste
pinch of garlic salt
1 tbsp butter
50g brown sugar
1l cream of cheese soup
100g Gruyere cheese
40g freshly-grated Parmesan cheese
200g grated mature Cheddar cheese

Method:

Bring a pan of lightly-salted water to a boil, add the onion then add the pasta and cook for between 8 and 10 minutes, or until the pasta is just al dente. Drain in a sieve then turn the onion and the pasta into a baking or casserole dish.

Season with salt and black pepper then add the garlic salt. Stir in the butter and brown sugar until dissolved then add the cheese soup, Gruyere cheese, Parmesan cheese and 50g of the Cheddar cheese. Stir to mix then sprinkle the remaining Cheddar cheese over the top.

Transfer to an oven pre-heated to 170°C and bake for about 45 minutes. Now place under a hot grill (broiler) and cook until the top is golden brown (about 4 minutes). Serve hot.
