M'Baazi

M'Baazi is a traditional Kenyan recipe for a classic vegetarian dish of cooked beans fried with onions, green bell pepper in a coconut milk sauce flavoured with chilli flakes. The full recipe is presented here and I hope you enjoy this classic Kenyan version of: M'Baazi.

M'Baazi is the Swahili for beans and any kind of white bean can be used. Traditionally, however, the dish is made with pea beans or black-eyed peas.

Ingredients:

200g dried pea beans (or pigeon peas or black-eyed peas etc)
1l boiling salted water
100g onions, finely chopped
100g green bell pepper, finely chopped
1 tsp salt
1/4 tsp red chilli flakes
4 tbsp oil
250ml coconut milk

Method:

Add the beans to the boiling salted water and cook until tender (about 1 hour) then drain. Meanwhile fry the onions, green bell pepper, salt, chilli flakes in the oil. Fry for about 3 minutes then add the drained beans and continue to fry until the onions have browned.

Add the coconut milk and simmer gently until the sauce thickens. Adjust the seasoning, pour into a bowl and allow to chill until completely cold.

Line small dishes with lettuce and dish our 120ml of the M'Baazi per portion. Garnish with parsley or tomato wedges and serve.
