Luscious lime upcakes: Classic British recipe for lime-flavoured cupcakes with a green lime icing (frosting).
Ingredients:
150g (5 oz) self-raising flour
125g (4 oz) golden caster sugar
125g (4 oz) margarine, softened
2 medium eggs
finely-grated zest of 1 lime
juice of 1 lime
pinch of salt
For the Topping:
225g (8 oz) unsalted butter, softened
175g (6 oz) icing sugar, sifted
25ml (1 tbsp + 2 tsp) lime cordial
a few drops of green food colouring
2 tbsp silver dragée balls
1 tbsp pink dragée balls
Method:
For the cupcake batter, combine the flour, sugar, margarine, eggs, lime zest and salt in a large mixing bowl. Beat with an electric mixer for about 90 seconds, or until smooth. Add the lime juice and beat once more until smooth (your final batter should have a soft, dropping, consistency).
Line the holes of a 12-well muffin tin with paper cases. Spoon the batter into these paper cases then transfer to an oven pre-heated to 180°C (350°C, Gas Mark 4) and bake for between 15 and 20 minutes, or until well risen and a toothpick inserted into the centre emerges cleanly. Remove from the oven and transfer to a wire rack to cool.
In the meantime, prepare the topping. Beat together the icing sugar and butter in a bowl until smooth and light. Add the lime cordial and beat until thoroughly incorporated. Now add a few drops of green food colouring, beating until you achieve the desired depth of green. Spoon this icing (frosting) into a piping bag fitted with a star-shaped nozzle.
When the cupcakes are completely cool, pipe the icing on top in a swirl pattern, working so that you achieve a peak at their tops.
Decorate with the silver and pink balls and serve.
