Lollipops

Lollipops is a traditional British recipe for a classic sweet (candy) made from a boiled blend of sugar, golden syrup, cream of tartar, flavourings and citric acid set onto sticks in lollipop moulds. The full recipe is presented here and I hope you enjoy this classic British version of: Lollipops.

Ingredients:

180g sugar
80ml golden syrup (or corn syrup)
120ml water
1/4 tsp cream of tartar
1/2 tsp flavouring
a few drops of food colouring
2 tsp citric acid
you will also need lollipop moulds and wooden sticks or skewers cut to size

Method:

Stir together the sugar, golden syrup, water and cream of tartar in a pan over medium heat using a wooden spoon. Continue cooking and stirring until all the sugar dissolves. Use a pastry brush dampened with warm water to remove any sugar crystals clinging to the sides of the pan. Stop stirring when the syrup comes to a boil.

Place a confectioner's (candy) thermometer in the pan (don't let it touch the bottom or the sides otherwise it will burst!) and let the syrup continue boiling (without stirring) until the mixture reaches the Hard Crack stage (about 149–153°C).

Immediately take the pan off the heat and let the syrup cool to about 135°C then add the flavourings, colourings (if using) and the citric acid. Working quickly now pour the syrup into greased lollipop moulds (the sticks should already be in there) ad twist the sticks to coat in the sugar before allowing to cool for 10 minutes

If you don't have lollipop moulds you can still make them, it's just a little trickier. You need a marble slab or large metal surface. Pour small circles (about 5cm) onto the cold surface and immediately place the lollipop stick in each one. Twist the stick to make certain it's covered with the sugar solution then allow to cool. (This is much easier to do with help as you need to work quickly to pour the sugar solution or it will set.)

After about 10 minutes the lollipops should have hardened enough for you to unmould them. Wrap in clingfilm or cellophane, seal with a twist and store.
