Limonata (Lemonade)

Ingredients:

180g sugar
1.8l water
2 tsp freshly-grated lemon zest
15 sprigs mint
6 medium lemons, juiced

Method:

Combine the water and all but 1 tbsp of the sugar in a pan. Heat gently until the sugar has dissolved then take off the heat and set aside. Meanwhile, combine the lemon zest, mint and 1 tbsp reserved sugar in pestle and mortar. Pound until they form a paste.

Add the mint paste to a bowl and stir-in the sugar solution. Allow to sit for 30 minutes to infuse then strain the liquid. Combine the lemon juice with the sugar solution then place in the refrigerator to chill for at least 2 hours before serving over crushed ice and garnished with sprigs of mint.
