Limelax (Lime Salmon) a Classic Swedish recipe for a dish of salmon dressed with smoked salmon, lime zest, basil and creme fraiche that's oven baked and served garnished with lime wedges and basil.

Ingredients:

1 fresh salmon fillet, skinned and boned (about 1.25kg)
1 1/2 tsp salt
pinch of coarsely-ground white pepper
50g smoked salmon
finely-grated zest of 1 lime
2 tbsp fresh basil, chopped
200ml light crème fraîche
lime wedges and fresh basil, to garnish

Method:

Place the salmon fillet in a large ovenproof dish. Season with salt and black pepper.

Finely chop the smoked salmon and mix in a bowl with the lime zest, basil and crème fraîche. Spoon this mixture over the salmon then transfer to an oven pre-heated to 200°C and bake in the top of the oven for about 20 minutes, or until the salmon is cooked through.

Garnish with lime wedges and fresh basil and serve with potatoes and roast vegetables.
