This is a classic spice seasoning from the Cayman Islands that, typically, is used as a dressing for salads and as a rub for meat and fish.

Method:

If you do not have dried zests, simply pare the zests from a lemon and lime, place on a baking tray and bake in an oven pre-heated to 120°C over-night.

Break the zests into small pieces then combine in a spice or coffee grinder with all the remaining ingredients and render to a fine powder. Store in an air-tight jar, where it will keep for several months.
