Pumpkin Cake is a traditional Liberian recipe for a classic sponge cake flavoured and moistened with cooked pumpkin that's flavoured with cinnamon, ginger and nutmeg. The full recipe is presented here and I hope you enjoy this classic Liberian version of: Pumpkin Cake.
Cream the butter and sugar together until light and fluffy then add the eggs one by one and mix in. Mix the dry ingredients together in a separate bowl. Add the pumpkin, soda and milk and blend well.
Add this blended mixture to the sugar, butter and egg mixture. Mix well then whisk rapidly. Pour into a 30 x 22 cm cake tin and bake in an oven pre-heated to 170°C (325°F/Gas Mark 3) for 25 minutes, or until done.
Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely.
These are typically served undecorated, you can ice (frost) then like a carrot cake, if desired.
