Liberian Cornbread

Ingredients:

150g cornmeal
200g plain flour
50g sugar
pinch of salt
2 tsp baking soda
240ml milk
60ml vegetable oil
1 large egg

Method:

Mix together the cornmeal and milk then allow to soak whilst you prepare the remaining ingredients. Mix together the flour, baking powder and sugar. Whisk the eggs and oil together and stir into the cornmeal then add the cornmeal mix to the flour and mix together.

Pour into a well-greased pan and bake in an oven pre-heated to 190°C for about 25 minutes, or until a toothpick inserted into the centre comes out clean.
