Les Palmiers du Jour de Valentine (Palmiers for Valentine's Day): A French recipe for a Valentine-themed snack of puff pastry filled with salted butter that's coated with coloured sugar before baking.
Ingredients:
400g granulated sugar
1/8 tsp coarse sea salt
2 sheets (500g) puff pastry, defrosted if frozen
coloured sugar crystals, to decorate
Method:
Mix together the granulated sugar and salt then turn half this mixture onto your worktop.
Sit the first of your puff pastry sheets on top then spread over half the remaining sugar and salt mix.
Press the sugar mix into the surface of the pastry and roll out into a rectangle about 30 x 37cm. Take the first long side of the pastry and fold half way towards the centre then repeat on the other side. Now fold the two sides of the pastry so that they meet in the centre.
Now fold the top half of the pastry over the bottom half so that the fold is hidden in the middle and you have six layers in total.
Slice the dough into 1cm slices then dip the two cut sides into the sugar mix left on the work surface.
Line a baking tray with parchment paper and arrange the pastry slices, cut side uppermost, on this.
Repeat with the remaining puff pastry sheet then dust the slices thickly with coloured sugar.
Transfer to an oven pre-heated to 210°C and bake for about 8 minutes, or until nicely browned on the bottom.
Turn onto a wire rack to cool then either serve or store in an air-tight container.
