Lentil and Hazelnut Burgers is a traditional American recipe for a classic Turkish-influenced vegetarian burger of lentils and hazelnuts. The full recipe is presented here and I hope you enjoy this classic British version of: Lentil and Hazelnut Burgers.

Ingredients:
400g dry lentils
60g bulgur wheat
1 onion, finely chopped
140g breadcrumbs
1 tbsp fresh parsley, chopped
3 eggs
150g roast hazelnuts, finely chopped
1/2 tsp dried thyme, crushed in a mortar
1 tsp dried basil, crumbled
1 tsp sea salt
freshly-ground black pepper, to taste
2 tbsp olive oil
Method:
Add the lentils and bulgur wheat to a pan, cover with water an bring to a boil. Reduce to a simmer then cook for between 20 and 45 minutes (depending on the type of lentils — less for red, longer for green) until the lentils are very soft. Drain and set aside to cool.
Combine the lentils, onion, breadcrumbs. parsley, eggs and hazelnuts in a bowl then season with the thyme, basil, salt and black pepper. Bring the mixture together with your hands and shape into about 15 patties some 5cm in diameter.
Add your oil to a frying pan over medium heat then add about four patties and fry for about 6 minutes per side, or until nicely browned and cooked through. Remove from the heat and keep warm then wipe the pan, add more oil and cook the next batch. Transfer to plates and serve.
