Ingredients:
4 lemons
100g sugar
vanilla extract or pineapple extract or passion fruit extract (optional)
3cm length of fresh ginger
mint leaves, or lemongrass
Method:
Juice the lemons then crush together the ginger and mint leaves or lemongrass in a mortar. Mix the lemon juice and the crushed ginger mixture together. Set aside for 30 minutes to infuse then strain the juice through a fine-meshed sieve.
Add sugar to taste then add flavouring (if desired). Serve over ice in tall glasses.
