Lemongrass Ginseng Tea is a traditional Singaporean recipe for a classic herbal tea made from an infusion of fresh ginseng root and lemongrass flavoured with cinnamon root that's sweetened with honey or sugar. Place the ginseng in a non-reactive (glass or ceramic) pan then add 500ml water and add the lemongrass along with the cinnamon. Bring the mixture to a rolling boil over medium-high heat then reduce to a simmer and cook for about 12 minutes.
Strain through a sieve into a clean mug, sweeten to taste with honey or sugar and serve.
