Lemon Verbena Lemonade

Ingredients:

300ml water
150g sugar
finely-pared zest of 2 oranges
10 leaves lemon verbena, slightly crushed in a mortar and pestle
8 large lemons
enough water to make this taste like lemonade for you

Method


Form the syrup by heating together 300ml water, 150g sugar and whichever fruit you like (I usually add the finely-pared zest of 2 oranges). Bring to a boil, take off the heat and allow to infuse until cold. Bring back to a boil and immediately add the lemon verbena leaves. Take off the heat and allow to infuse until cold.

Meanwhile juice the lemons and strain the lemon verbena syrup into the lemon juice. Add sufficient water so that the liquid tastes like lemonade to you.

Serve over ice and garnish with a leaf of lemon verbena.
