Lemon-brined Turkey

Ingredients:

1 small frozen turkey (about 4kg)
2l water
2 litres clear lemonade (eg R Whites)
120g salt
1 chicken stock cube
1 preserved lemon (enough sliced to be equivalent to 1 lemon)

Method:

Combine the water and lemonade then dissolve the salt and chicken stock cube in this. Add the preserved lemon slices and frozen turkey then transfer to a roasting bag, seal and stand upright in a tin or cardboard box; ensuring the turkey is completely covered. Set aside in a cool place for 18 hours.

After this time drain the turkey thoroughly then place the salted lemon slices in the body cavity. Transfer to a roasting bag and seal this up (ensure there is plenty of air space) then set in an earthenware casserole dish. Transfer to an oven pre-heated to 150°C and roast for between 150 and 180 minutes, or until the turkey is cooked through. Remove from the oven and allow to rest in the bag for 30 minutes before opening the bag, carving and serving.
