Leftover Porridge Muffins
Leftover Porridge Muffins is a modern Scottish recipe for a rather unusual muffin made from a base of leftover thick porridge with eggs, sugar, nuts and fruit that makes an interesting treat or coffee accompaniment for Hogmanay or Burns Night. If you are looking for something a little different to serve your guests at a Hogmanay party or Burns Night supper, then these leftover porridge muffins might be just what you need. They use leftover porridge to produce a healthy muffin that goes brilliantly with tea or coffee (or even with a wee dram).
Ingredients:
2 eggs
65g butter, melted and cooled
2 tbsp treacle (molasses)
200g dark brown sugar
250ml cooked porridge (this should be on the thick side)
1 tsp vanilla extract
1/4 tsp salt
4 tbsp whole milk
75g walnuts or hazelnuts, chopped
100g (about) raisins, chocolate chips, dried cranberries, sultanas etc (any dried fruit or chocolate you like)
120g wholemeal flour
1 tsp baking powder
1 tsp baking soda
Method:
Combine the eggs, butter, treacle, sugar, porridge, vanilla extract, salt, milk and nuts in a bowl with your choice of fruit or chocolate.
Mix thoroughly together then set aside. In a separate bowl, mix together the flour, baking powder and baking soda. Add the dry ingredients to the wet ingredients and mix until just moistened and combined.
Spoon the mixture into greased or lined muffin cups, filling them no more than 2/3 full. Transfer to an oven pre-heated to 170°C and bake for about 18 minutes, or until the muffins are golden brown and a skewer inserted into the centre emerges cleanly.
Allow to cool in the muffin tins for 10 minutes then turn out onto a wire rack to cool completely.
These are best served warm, but they can be re-heated in a low oven or in the microwave.
