Parkin
Parkin is a traditional English recipe (from Lancashire) for a classic moist cake of butter, flour and oatmeal flavoured with black treacle and ginger that was traditionally served on Guy Fawkes night with cheese. When thinking of parkin, most people associate this sticky ginger-flavoured cake with Scotland. What's less known is that Parkin is also a traditional Lancashire cake and it's this variant I present here. It was traditionally eaten round the bonfire on Guy Fawkes Night, the 5th of November, sometimes served with a thin sliver of Lancashire Cheese.
Ingredients:
100g butter
150ml black treacle (molasses)
150ml golden syrup (corn syrup)
100g dark muscovado sugar
150g self-raising flour
150g coarse oatmeal
30g mixed peel, chopped (optional)
2 tsp ground
ginger
1/2 tsp ground
cinnamon
1 tsp bicarbonate of soda
6 tbsp whole milk
1 egg, beaten
Method:
Heat the butter, black treacle, golden syrup and sugar in a pan until melted together and soft. Take off the heat and set aside to cool slightly.
In the meantime, sift the flour, ginger, cinnamon and bicarbonate of soda together into a large mixing bowl. Stir in the oatmeal then form a well in the centre and slowly add the cooled syrup mixture, stirring gently to prevent lumps from forming. Now add the beaten egg and milk and blend until you have a thick batter.
Pour into a loaf tin that's been greased and lined with baking parchment. Transfer to an oven pre-heated to 150°C and bake for 75 minutes, or until firm to the touch. Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before slicing and serving.
