Kuba (Mushroom and Barley Casserole) is a traditional Czech recipe for a classic casserole of barley and dried mushroom with onions in a marjoram-flavoured stock which is typically served on Christmas Eve. Melt the butter in a pan and use to fry the onion for about 6 minutes, or until soft and translucent. Meanwhile, wash the mushrooms until free from grit then stir into the onion mix along with the barley grains. Add the water and salt, bring to a simmer then cook, uncovered, until all the water has evaporated away, stirring frequently.
Add all the remaining ingredients at this point then turn the mixture into a well greased casserole or baking dish, cover and transfer to an oven pre-heated to 180°C. Bake for about 30 minutes, then serve hot.
