Ingredients:

140g rolled oats
60g rolled oats (about, to coat)
250ml water or vegetable stock
1 medium potato (or 1 large field mushroom), grated
45g parsley, finely chopped
2 large onions, chopped
1 egg, beaten
1 spring onion, chopped
3 garlic cloves, mashed
salt, freshly-ground black pepper and curry powder, to taste

Method:

Add the 140g rolled oats to a bowl then pour over the water or stock. Cover and set aside to swell for 15 minutes.

Heat a little oil in a pan and use to fry the onion, spring onion, garlic and potato (or mushroom) for about 8 minutes, or until the onions are golden. In a bowl, combine the fried ingredients with the soaked oats then stir in the parsley and the beaten eggs. Season to taste with salt, black pepper and a little curry powder.

Form the mixture into round croquettes (you should have enough for eight) then roll in the remaining oats to coat. Fry in oil and serve either as an accompaniment or as a starter with a green salad.
