Korean instant mild curry powder is more of a thickener that's lightly flavoured with curry spices (with the exception of hot chilli; only a little sweet paprika is added). The following is a simulacrum of Ottogi Medium curry powder; the most well known brand in Korea. The colour should be yellow due to the turmeric. Note that the standard pack size is 100g (3 1/2 oz), so a half pack would be 50g.
Ingredients:
8 tbsp wheat flour (sifted to extract the fine powder only)
8 tbsp turmeric
4 tsp ground coriander
4 tsp ground cumin
1 tsp ground fenugreek seeds
1 tsp ground fennel seeds
4 tsp vegetable oil powder
1 tbsp fine sea salt
4 tbsp cornflour
8 tsp tomato powder
4 tsp sea tangle (Laminaria japonica) extract (or other seaweed extract)
4 tsp onion powder
4 tsp garlic powder
4 tsp sugar
1 tsp soy sauce powder
1 tsp yeast extract powder
2 tsp sweet paprika
Method:
To make this sift the ingredients through a fine-meshed sieve then spoon into an air-tight jar. Store in a cool, dark, place until needed.
