Koeksisters: Classic South African recipe for a traditional snack of fried, braided, pastry strips flavoured with cinnamon that are served dipped in syrup.
Ingredients:
For the Koeksisters:
350g plain flour
240g granulated sugar
4 eggs
2 tsp ground cinnamon
1 tsp mixed spice (pumpkin pie spice)
120g butter
1/2 tsp active, dried, yeast
fat for frying
For the Syrup:
675g granulated sugar
570ml water cinnamon
Method:
Mix the yeast with a little sugar then add all the remaining dry ingredients. Beat the eggs together then add to the mixture. If the dough is a little dry add some water. Bring all the ingredients together into a dough then knead and allow to prove for 1 hour, covered, in a warm place.
Knock the dough back then roll out and cut into rectangles about 1.5cm thick. Allow to raise for 30 minutes then fry in deep fat until golden brown.
Meanwhile add the ingredients for the syrup together and bring to a boil. Take off the heat and dip the koeksisters into this as they become ready.
