Koeksisters: Classic South African recipe for a traditional snack of fried, braided, pastry strips served dipped in syrup.
Ingredients:
750g plain flour
1 tsp salt
4 tsp
baking powder
4 tbsp butter
2 tbsp lard
2 eggs
240ml milk
oil for deep frying
700g sugar
360ml water
1/2 tsp ground
ginger
2
cinnamon sticks
Method:
In a pan, dissolve the sugar in the water, add the ginger and cinnamon and let the syrup just reach boiling point. Allow to cool then place in a basin or sink filled with ice so that it remains well-chilled.
To make the pastry sift the dry ingredients together then cut-in the butter and lard. Beat the eggs, add the milk and slowly pour this into the flour mixture until it forms a soft dough. Tip onto a floured surface and roll to a thickness of 1cm. Cut into strips about 4cm wide and some 15cm long. Cut these strips lengthways into three narrower strips of equal width (but leave them attached at one end). Braid the three strips together and pinch the bottom end to seal the join.
When you've completed forming the koeksisters deep fry a few at a time in hot oil for 1–2 minutes, or until a light golden brown in colour. Remove from the oil with a slotted spoon, drain briefly on a paper towel then place in the chilled syrup for a few seconds. Lift out with a slotted spoon, drain them for a moment then place on a plate to dry.
