Ingredients:

1kg potatoes
400ml oil
2 eggs
18 tbsp wheat groats
20 (or more) tbsp plain flour
salt, to taste
20 medium plums, pitted
breadcrumbs (about 250g)
a little sugar (about 2 tbsp)

Method:

Bring a pan of lightly-salted water to a boil and use to cook the potatoes in their skins for about 25 minutes, or until tender. Set aside to cool then peel the potatoes and mash them. Add the oil, wheat groats, flour and eggs to the bowl and bring together as a hard dough (add a little more flour if the mixture is sticky).

Turn onto a lightly-floured work surface and knead until smooth and elastic. Now dry fry your breadcrumbs in a non-stick pan until golden then turn into a bowl and mix with the sugar then set aside.

Bring a wide but shallow pan of water to a boil. Take a little of the prepared dough, flatten in your palm and use to completely coat a plum so you have a little ball. Make a number of these and drop in the water. They are ready when they float back up to the top of the liquid. Remove with a slotted spoon and roll in the breadcrumb and sugar mix. Serve hot, then repeat the process with the remaining dumplings.
