Kiri Bath (Coconut Milk Rice)

In Sri Lanka this is probably the most common breakfast dish.

Ingredients:

450g white rice
350ml coconut cream
salt to taste

Method:

Wash and pick over the rice then place in a pan. Pour in water to cover the rice by a depth of 5cm. Bring to a simmer, cover the rice and cook over low heat for about 15 minutes, or until the rice is almost tender.

Season the coconut milk with salt then stir into the rice. Cook for a few minutes more, or until the coconut milk is hot.

To serve, turn the rice into a shallow dish. Flatten the surface with back of a spoon or with a spatula. Cut into squares and serve with seeni sambol, cutta sambol and jaggery.
