Surf and turf has always been a Cornish food speciality, typically a mix of pork and seafood in the Cornish case. So you have pork stuffed with crabmeat (a recipe in this book) and you also get modern recipes like this mix of king scallops and black pudding.
Ingredients:
16 king scallops
100g (1/2 cup) butter
2 garlic cloves
8 slices of black pudding
1 rasher of thick-cut back or middle bacon, rind removed and sliced into strips
salt and freshly-ground black pepper, to taste
green salad, to serve
crusty brown bread, to accompany
lemon wedges, to accompany
Method:
Crush the garlic then mix with the butter until completely combined.
Season the scallops with salt and black pepper then set aside.
Heat a pan over high heat. When the pan is hot add the bacon and black pudding. Fry, stirring frequently for 4 minutes or until they begin to brown. Add the scallops and the garlic butter and cook the shellfish over high heat for 2 minutes per side.
Arrange a small green salad on each of four serving plates. Arrange the black pudding on top of the salad and the scallops on top of the black pudding. Drizzle over the garlic butter sauce and serve with a generous hunk of fresh crusty bread and a wedge of lemon.
