Ingredients:

1 rabbit, jointed
200g piece of pickled pork
200g greens (kale, spring greens, Savoy cabbage, etc), washed and shredded
black pepper and mace, to taste

Method:

Joint the rabbit and place in a stockpot along with the pickled pork. Pour over enough water to cover the meat by about 2 cm. Bring to a boil, reduce to a simmer, cover the pot and cook for 20 minutes.

Now add the shredded greens, top up the water so that all the ingredients are covered, bring to a boil, reduce to a simmer, cover the pot and cook gently for 3 hours.

Remove the pickled pork, shred it and return to the soup. Season to taste with black pepper and mace (the pickled pork is salty, so you should not need to add more salt).

Serve in a tureen, accompanied by oatcakes.
