Khalva (Syrup Walnut Dessert)

Ingredients:

420ml milk
4 tbsp sugar
1 tsp cornflour (cornstarch)
180g shelled walnuts, halved
8 tbsp unsalted butter, melted
1/2 tsp cinnamon

Method:

In a l1 steel pan combine 360ml of the milk with sugar. Heat gently until all the sugar dissolves. Whisk together the cornflour and the remaining sugar to form a smooth slurry then whisk into the milk and sugar mix. Increase the heat and bring the mixture to a boil. Continue cooking, stirring frequently, until the mixture thickens to a custard-like consistency then take off the heat and set aside.

Combine the walnuts and melted butter in a bowl and toss with a wooden or plastic spoon until evenly coated. Transfer to a shallow baking pan just large enough to hold them in a single layer and spread out in a single layer. Transfer to an oven pre-heated to 180°C and toast for about 20 minutes, turning frequently, until they are coloured a deep brown (but do not allow to burn).

Remove the pan from the oven and pour the custard over the top. Cover the pan securely with foil then return to the oven and bake for about 20 minutes, or until the custard is hot, thick, and syrupy.

Transfer to small serving bowls, sprinkle with cinnamon and serve.
