Ingredients:
4 tbsp fennel seeds
50 whole green cardamoms (hari elaichi)
35 whole black peppercorns (kali mirch)
2 cinnamon sticks (dalchini) (crushed)
1 whole blade of mace(javitri)
1 whole nutmeg (jaiphal) (crushed)
1 whole star anise (chakri phool)
30 whole cloves (laung)
Method:
Separately dry toast all the ingredients in a small non-stick pan over low heat until they are slightly browned and fragrant, stirring continuously.
As each spice is toasted, turn out onto a plate and allow to cool completely.
Once each spice has been toasted and all the spices are cool combine them in a spice or coffee grinder and render to a fine powder.
Store the garam masala in an air-tight tin or jar. It will keep for up to a month.
