This is a classic South Indian spice blend that is aromatic rather than spicy and goes very well with various fish and seafood dishes.

Ingredients:

4 tbsp whole fennel seeds
25 whole cloves
25 whole black peppercorns
2 cinnamon sticks, broken into pieces
1 star anise
4 tsp whole green cardamom pods, crushed and with seeds removed
1 whole nutmeg
1 piece whole mace

Method:

In a mortar, crush the nutmeg into pieces. Place in a spice grinder, render to a powder then set aside.

Place a small, dry, frying pan over medium-low heat. Once hot add the fennel seeds, colves, black peppercorns, cinnamon, star anise, cardamom seeds and mace. Dry toast for about 2-3 minutes, until the fennel begins to colour slightly and the remaining spices are aromatid. Do not allow to burn or you spice blend will be bitter.

Take the pan off the heat, turn the spices onto a plate and set aside to cool for 5 minutes.

Tip the spices into the spice grinder then pulse to chop. Add the ground nutmeg and render everything down to a fine powder.

Store in an air-tight container where it will keep for 2 months.
