Kuchoma represents the spice blend used to flavour the meat in this recipe (basically, all the ingredients below the meat).

Ingredients:

600g meat, cubed into 3cm dice (any meat, including offal can be used)
80g coarse salt
2 tbsp coarse black pepper
1 tbsp red chilli flakes
2 tbsp sugar
1/2 tsp ground ginger
1 tsp garlic powder (optional)
1 tsp onion salt (optional)

Method:

Mix the coarse salt, black pepper, chilli flakes, sugar and ground ginger together and use this as a rub for the meat. If the meat is a little dry add a little light oil then barbecue the meats on a hot barbecue for about 10 minutes, turning frequently (to make the meat easier to cook you can thread onto skewers, but the beef cubes should be removed from those skewers before serving).
