Karabakh Khorovats (Skewered Pork with Pomegranate Syrup)
Karabakh Khorovats (Skewered Pork with Pomegranate Syrup) is a traditional Azerbaijani recipe for a classic dish of diced pork marinated in herbed pomegranate syrup that's grilled or barbecued and served with a tomato, pomegranate syrup and spring onion garnish. Ingredients:
1kg lean, boned, loin of pork cut into 3cm dice
1 tbsp dried oregano, crumbled
1 large onion, finely grated
1 tbsp olive oil
2 tbsp pomegranate syrup
2 tsp salt
freshly-ground black pepper
To Garnish:
2 tomatoes, quartered
pomegranate syrup, poured into a bowl
8 spring onions, trimmed and shredded
Method:
Combine the oregano, onion, olive oil, pomegranate syrup salt and freshly-ground black pepper, to taste, in a large bowl and mix to combine thoroughly. Add the pork and toss to coat evenly. Cover with a cloth and set aside to marinate at room temperature for at least 3 hours, mixing every half hour or so. In the meantime soak your wooden skewers in a large bowl of water.
Light your barbecue and wait until the charcoal develops a coating of white ash. At this point it is ready to cook with. Thread the pork cubes onto the skewers and cook on your pre-heated barbecue (you can also grill [broil] them), turning frequently, for about 20 minutes or until the pork is well browned on each side and cooked through.
Slide the cooked pork cubes onto a warmed serving plate, garnish with the tomatoes and shredded spring onions and accompany with a bowl of pomegranate syrup.
