Kalamar Tava (Turkish Fried Calamari)

Ingredients:

350g calamari (squid) rings (either fresh or thawed, frozen)
salt and freshly-ground black pepper, to taste
120ml beer
5 tbsp plain flour
oil for deep frying (about 250ml)

For the Sauce:
45g walnuts or pine nuts, ground
70g breadcrumbs (made from day-old bread)
2 garlic cloves, minced
250ml plain yoghurt
2 tbsp olive oil
salt and black pepper, to taste

Method:

Begin with the sauce: Combine all the ingredients together in a bowl and whisk to combine. Allow to sit in the refrigerator for at least 30 minutes before serving.

Drain the calamari on kitchen paper then season liberally with salt and black pepper. Meanwhile, whisk together the beer and flour to make a smooth batter. Add the squid rings and stir to combine well.

Heat the oil in a wok or deep pan and when hot (when a drop of the batter sizzles when you add to the oil) lift the calamari rings and add to the oil one by one. Allow to fry for no more than 1 minute (over frying will make the squid rubbery and unpleasant) but make certain you turn the rings over several times. Remove with a slotted spoon and set aside on kitchen paper to absorb any excess oil.

Serve on a plate, accompanied by Turkish Tartar Sauce for Seafood.
