Kaju Maluwa (Cashew Curry)

I started making these recipes for my wife, who loves cashew nuts. In this vegetarian dish, the cashew nuts are soaked to soften before bring cooked in the curry as the main flavour ingredient.
Ingredients:
240g (8 oz) cashew nuts
1 onion, finely chopped
5 garlic clove
10 curry leaves
2 hot green chillies, chopped
½ tsp cumin seeds, toasted and ground
½ tsp fennel seeds, toasted and ground
½ tsp ground turmeric
1 tsp hot chilli powder
½ tsp
Sri Lankan curry powder
4 cardamom pods, crushed
1 cinnamon stick
250ml (1 cup) coconut milk
125ml (½ cup) coconut cream
2 tbsp ghee (clarified butter)
Method:
Soak the cashew nuts in a bowl of water for an hour. After this time, drain and set aside.
Place a pan over high heat. When hot add the ghee, followed by the onion, garlic, curry leaves and hot chillies. Stir well to combine. Cook for 5 minutes, until the onion is tender then add the cumin, fennel, turmeric, chilli powder, curry powder, cardamom and the cinnamon stick.
Reduce the heat to medium and continue cooking, stirring, until the spices are lightly toasted. Add the soaked cashew nuts (drain first), then stir to combine before adding the coconut milk. Bring everything to a boil, reduce to a simmer and cook for about 15 minutes or until the sauce has reduced to your liking.
Now add in the coconut cream, return to a boil, reduce to a simmer and cook for 5 minutes.
Adjust the seasonings to taste and serve hot with white rice.
