Ingredients:

400g dried red bissap (hibiscus flowers)
250g caster sugar
2 packets of vanilla sugar
1 tbsp orange blossom water (or leaves from 1/2 bunch of mint)

Method:

Rinse the hibiscus flowers in a large bowl of water then drain.

Bring 2l water to a boil, add the hibiscus flowers and continue boiling or 20 minutes, or until the water is nicely tinted red and is aromatic.

Take off the heat and set aside to cool then strain the juice from the flowers. Add the sugar, vanilla sugar and orange flower water (or mint leaves) to the liquid and mix until the sugars have dissolved.

Pour the resultant juice into bottles and store in the refrigerator until well chilled.

Serve within a couple of days of making (its best on the day it's prepared).
