This is a classic Jamaican fish dish that's often served for Christmas, though it can be prepared any time of year.

Ingredients:

500g Fish Fillet (use fish of your choice)
2 tbsp jerk seasoning
2 tbsp onion, very finely chopped
2 tbsp spring onions, finely chopped
2 tbsp cooking oil
2 garlic cloves, minced
1 lime, cut into wedges, to accompany

Method:

Wash the fish fillet then pat dry. Pre-heat your barbecue (if using) or your grill to high.

In a bowl, mix together the onion, garlic, jerk seasoning, spring onion and oil. Add the fish to the jark mixture, ensuring it's completely coated then set aside to marinate for 1 jour.

Set the coated fish on your barbecue (or under your pre-heated grill) and cook for 10-15 minutes, turning occasionally until cooked through and the coating is nicely coloured.

Serve hot, accompanied by lime wedges.
