Jerjeera is a classic salad most closely associated with Middle Eastern and Levantine cuisine, though it also features in Sudanese cookery.

Ingredients:

1/2 cucumber, cubed
3 tomatoes, cubed
rocket leaves
2 spring onions, finely sliced
juice of 1 lemon
pinch salt

Method:

Mix the vegetables together, sprinkle the lemon juice over the top, season with salt then toss to combine and serve.
