Japanese Baked Mitake

This is a classic Japanese method for baking young Mitake (Hen of the Woods) fungi.

Method:

Wash the whole mitake mushroom well. Take a large sheet of aluminium foil and fold in half. Form into a cup shape, place the spring onions in the base then sit the mitake mushrooms on top. Drizzle the groundnut oil over the fungus then scatter the seven-spice powder over the top.

Add the rice wine vinegar then fold the foil into a secure parcel. Transfer to an oven pre-heated to 160°C and bake for about 80 minutes, or until the fungus is soft and cooked through.

Serve as a part of any Japanese meal. Or with rice and Tuna Ceviche.
