Jamaican Rum Prawns is a traditional Jamaican recipe for a classic starter of prawns marinated in a mix of garlic, soy sauce, rum, olive oil, ketchup, pineapple, onion and tomatoes that are cooked in vegetable stock and served with rice. Ingredients:
675g prawns, peeled and de-veined
3 garlic cloves, minced
1 tbsp soy sauce
3 tbsp dark rum
3 tbsp olive oil
1 tsp jerk seasoning
120ml ketchup
220g tinned, crushed, pineapple
1 onion, chopped
2 tomatoes, chopped
salt and freshly-ground black pepper
60ml vegetable stock
spring onions, sliced, to garnish (optional)
Method:
Combine the garlic, soy sauce, rum, olive oil, ketchup, pineapple, jerk seasoning, onion and tomatoes in a bowl. Season to taste then stir in the prawns, ensuring they are well coated, and set aside to marinate over night in the refrigerator.
The following day, add the vegetable stock to a wok, bring to a boil then stir in the prawns and their marinade. Bring to a simmer and stir-fry for about 20 minutes, or until the ingredients are hot and the prawns are cooked through. Serve hot with rice.
