Jamaican Coconut Rice

This is a classic recipe for aromatic rice cooked in coconut milk. Note that this is not the same as rice and peas or even coconut rice and peas. They are all three different rice dishes.

Ingredients:

380g (2 cups) brown basmati rice
1½ tsp garlic minced
1½ tsp onion granules
8 sprigs of thyme, tied together
½ tsp salt
375ml (1½ cups) water
400ml (1 tin) full fat coconut milk
2 tbsp creamed coconut
8 pimento (allspice) berries

Method:

Wash the rice thoroughly with several changes of water until the water runs clear, using your hands to toss the rice to ensure each grain is well rinsed (easiest done in a large, fine-meshed, sieve).

Transfer the rice to a large pot and add the thyme, onion, garlic, allspice berries and salt.

Mix together the coconut milk, water and creamed coconut in a jug. Whisk until well combined then pour over the rice. Add enough water to ensure the rice is covered.

Cover with a tight-fitting lid, bring to a simmer and cook for 20 minutes. Take off the steam and set aside to steam for 5 minutes.

After this time, remove the thyme and pimento berries. Fluff the rice, adjust the seasoning to taste, turn into a warmed serving dish and bring to the table.
