Jamaican Citrus Cheesecake

Jamaican Citrus Cheesecake is a traditional Jamaican recipe for a classic no-bake cheesecake of a cream cheese topping flavoured with citrus that's set with gelatine and set on a Graham cracker base. Ingredients:

140g Graham crackers, crushed
100g butter or margarine, melted and cooled
2 tbsp unflavoured gelatine powder
180ml concentrated grapefruit juice
1 tbsp freshly-grated lime zest
2 tbsp freshly-grated orange zest
130g light brown sugar
400g cream cheese, softened (or you can use my home-made cream cheese recipe to prepare your own)
180ml skimmed milk
2 medium egg whites

Method:

Combine the biscuit crumbs and melted butter (or margarine) in a bowl then press into the base and up the sides of a 20cm diameter springform cake tin. Transfer to the refrigerator and chill as you prepare the filling.

Combine the grapefruit juice and gelatine in the top of a bain-marie (double boiler) over hot water. Stir the mixture until the gelatine has dissolved then stir in the sugar until dissolved and take off the heat then set aside until cooled.

Mix together the cream cheese, zests and milk until smooth then stir his mixture into the gelatine. Transfer to the refrigerator and chill until the mixture is just at the point of setting. In the meantime, add the egg whites to a clean and dry bowl then whisk until smooth. Gently fold the egg whites into the chilled gelatine mixture.

Spoon this mix onto the prepared base then transfer to the refrigerator and chill for about 60 minutes, or until completely set. Remove from the pan and serve.
