Bammy

My wife found some cassava in the local market recently. It turned out to be sweet (low cyanogenic glycoside) cassava suitable for baking. She took some to make candy and I used the remainder to make a sticky cassava cake. However, there was just enough left over to make bammy. Bammy is a classic Jamaican flatbread typically served with Jamaican Escovitch Fish, but which is also served with ackee and saltfish. However, I made it to accompany a Durban-style lamb curry with the bammy replacing the more typical roti and being used to mop up the curry gravy.

Bammy is simply made from a blend of grated cassava and a little salt that’s fried to cook and then soaked in coconut milk.

Ingredients:

500g (1 lb) sweet cassava, peeled and grated
Pinch of salt
400g (14 oz) tin of coconut milk
Oil for frying

Method:

As soon as you grate the cassava put it in a tea towel and wring out thoroughly to remove all the excess water. Mix in the salt then divide the cassava into two portions and shape each one into a disk.

Pour the coconut milk into a wide flat-bottomed dish, whisk lightly and set aside.

Heat oil in a non-stick pan over medium heat. When the oil is hot carefully transfer the first bammy to the pan. Cook for about 4-5 minutes per side, or until the bammies are hot through and nicely marked on each side. As soon as the bammy is cooked slide into the coconut milk and allow it to absorb the milk for about 5 minutes, as you cook the second one.

Once your bammy is well soaked add a little more oil to your pan and put the bammy in his. Cook until hot (but be careful it does not scorch). Transfer to a plate, cut into four wedges and serve.

As well as these large bammies you can also cook individual ones.
