Jacket Potato Salad

This is an interesting Irish recipe for a modern twist on the classic potato salad. You will notice that the potatoes are threaded onto skewers before baking. You will need to use metal skewers for this. The skewers make it easier to handle the potatoes whilst also allowing the heat of the oven to penetrate to the middle so they cook quicker.

Ingredients:

500g small old potatoes, scrubbed but not peeled
175ml natural yoghurt
3 tbsp lemon juice
5 spring onions, finely chopped
3 tsp Dijon mustard
1 red bell pepper, sliced into strips
salt and freshly-ground black pepper, to taste

Method:

Thread the potatoes onto skewers, arrange on a baking tray then transfer to an oven pre-heated to 200°C (Gas Mark 6) and make for about 35 minutes or until tender.

In the meantime, mix together the yoghurt, lemon juice, spring onions and mustard. Season to taste and stir to combine.

When the potatoes are cooked remove from the oven and allow to cool, but cut them into quarters whilst still warm. Mix in a bowl with the red bell pepper strips then toss with the dressing to coat.

Serve at room temperature.
